- 4 Zespri Green kiwifruit, peeled and chopped into even-sized pieces
- 200g rocket leaves, rinsed
- 12 slices of Parma ham , cut into three pieces
- A handful of walnut pieces
- 150g Cambozola or Stilton
- 12 small pieces of toast
- 4 tbsps olive oil
- 2 tbsps balsamic vinegar
- Black pepper
- Coarse salt
- Spread the toasts with Cambozola.
- Mix the rocket, ham, walnuts, Zespri Green kiwifruit, olive oil and balsamic vinegar. Season with salt and pepper.
- Arrange on four plates.
- Place the toasts in the salad and serve.
