INGREDIENTS
250 g Zespri SunGold kiwifruit, peeled and diced
250 g frozen or fresh berries
50 g caster sugar
4 tablespoons orange juice
25 g butter, cubed
50 g plain flour
30 g sliced almonds
30 g chopped walnuts
4 scoops of vanilla ice cream (optional)
METHOD
- Preheat the oven to 200C (180C Fan) Gas 6.
- Place the prepared Zespri SunGold kiwifruit and berries in a small saucepan with the orange juice and half the sugar. Cook gently for 3-4 minutes. Set aside.
- In a mixing bowl, rub the flour and cubed butter together with your fingertips until it resembles crumbs. Add the remaining sugar, almonds and walnuts, and mix well.
- Pour the fruit mixture into a heatproof dish - 12x12cm square or 18cm diameter - cover with the crumble mixture. Bake in the preheated oven for 25-30 minutes.
- Serve in portions and, top with ice-cream.
