1/2 lb boneless chicken breast, cut into 1-inch pieces
¼ cup balsamic vinegar
2 garlic cloves, minced
1 teaspoon salt
½ teaspoon pepper
1 teaspoon Italian seasoning
4 Zespri SunGold Kiwifruit
1-2 medium zucchini, sliced into thick rounds
- In a bowl, combine chicken, balsamic vinegar, garlic, salt, pepper, and Italian seasoning and toss to combine. Cover, refrigerate, and allow to marinate for at least 30 minutes or up to 4 hours.
- When ready to cook, peel kiwi and cut into halves. Optional: Leave skin on.
- Assemble 4 skewers with alternating pieces of chicken, zucchini, and kiwi. Grill over medium heat until chicken is cooked through.
