STICKY SPICY SWEET ZESPRITM SUNGOLDTM KIWI MARINATED CHICKEN
INGREDIENTS
2 Zespri™ SunGold™ Kiwi, peeled and finely chopped
1/4 cup soy sauce
1/4 cup unseasoned rice vinegar
2 tablespoons honey
2 tablespoons sesame oil
1 tablespoon sriracha sauce
1 tablespoon grated fresh ginger, or 1/4 teaspoon ground dry ginger
2 cloves garlic, minced
6 to 8 boneless, skinless chicken thighs
Diced Zespri SunGold Kiwi and fresh cilantro leaves, for garnish
METHOD
Place soy sauce, rice vinegar, honey, sesame oil, sriracha sauce, Zespri SunGold Kiwi, ginger, and garlic in a large resealable bag. Refrigerate for several hours or overnight.
Place chicken on a well-oiled grill over medium-high heat and cook for 5 minutes on each side or until nicely charred.
Place chicken on a large piece of foil and pour marinade over the top. Cook for 5 minutes more or until marinade has reduced to a nice glaze, moving chicken pieces around several times.
Garnish with diced Zespri SunGold Kiwi and cilantro.
