2 cups watermelon, scooped with a melon baller, or cubed
2 cups Zespri SunGold Kiwi, peeled and sliced into wedges
1 (750 ml) bottle prosecco or alternate dry sparkling wine
1/4 cup fresh mint, for garnish
Combine watermelon, kiwi and sparkling wine in a pitcher, stir to combine
Chill until ready to serve, pour into glasses and add springs of mint for garnish, if desired
Using a wedge of kiwi, wet the rim of glasses. Dip rims in sugar to coat the top of the glass, before pouring prosecco mixture.
