2 Zespri™ SunGold™ Kiwi, peeled
6 tablespoons mashed watermelon
2 large sprigs fresh mint, coarsely chopped
2 thin slices jalapeno pepper
Lime flavored sparkling water
Slice one Zespri™ SunGold™ Kiwi and freeze until firm. Puree the second Zespri SunGold Kiwi.
Spoon 3 tablespoons of watermelon into each of two cocktail glasses, making sure to add any accumulated juices. Add mint or jalapeno and stir into watermelon; let stand for 5 minutes for flavors to blend.
Add ice cubes and frozen Zespri SunGold Kiwi slices to glasses and top with equal amounts of Zespri SunGold Kiwi puree.
Pour lime flavored sparkling water over the top.
Step 2 can be prepared several hours in advance and stored in the refrigerator until ready to finish.
