
French Toast with Zespri™ SunGold Kiwifruit Sauce

ZESPRI SUNGOLD KIWIFRUIT SAUCE
2 Zespri SunGold Kiwifruit, peeled and cut into chunks
1 tbsp honey

FRENCH TOAST 3 eggs
300 ml milk
¼ tsp salt
2 tsp sugar
4 slices wholemeal bread*, cut into triangles
2 tbsp butter

METHOD
- Combine Zespri SunGold Kiwifruit and honey together in a small food processor and whiz for a few seconds until smooth. Pour into a small bowl or jug and keep refrigerated until ready to serve.
- To make French toast, beat eggs, milk, salt and sugar together until well combined. Dip bread slices (a few at a time) until well-soaked in the mixture.
- Heat a heavy-based frying pan on medium heat and melt a tablespoon of butter in it. Lay the bread slices (well-spaced apart) on the frying pan and cook each side till golden brown (about 3 – 4 minutes per side). Remove onto a serving plate.
- Heat remaining tablespoon of butter and fry the remaining bread as above. Serve warm with Zespri SunGold Kiwifruit sauce.
*Best if bread is 2 days old as fresh bread won’t absorb the egg mixture well.
